Successful week. :)

Today was meant to be a yoga/rest day, but my friend invited me to hike! So, we went to a 3.5 mile trail in our town. The weather was nice, we were decently sweaty, and it definitely worked my legs. Now, I’m (exhaustedly) off to a bonfire with a different group of friends! I’m hoping to be in by 9.. so I can chill out for a while and get a great night’s rest.

This diet hot chocolate is one of the reasons I’m still functioning on this weight loss journey. With no chocolate bars or hershey’s kisses, this is where I can turn for my chocolate fix. With only 25 calories a pack, when mixed with 6 oz of water, this is pure heaven! Thank you, Swiss Miss.

Protein Pumpkin Pancakes!

Ah, don’t you love autumn, with all the pumpkin recipes circulating? I never knew I was such a pumpkin fan until this year. These pancakes turned out surprisingly healthy and extremely fluffy and delicious!

Ingredients:

  • 1/2 cup oats
  • 6 egg whites
  • 1/4 cup canned pumpkin
  • 2 tsp baking powder
  • 1/2 tsp pumpkin spice
  • 1/2 tsp vanilla extract
  • 2 tbs agave (for topping)

Instructions:

  1. Blend the oats in a blender until they resemble flour.
  2. Add the other ingredients and blend until combined.
  3. Cook on a skillet on medium to low heat
  4. Top with agave, cinnamon, and more pumpkin spice.
  5. Enjoy!

With the agave, these pancakes turned out to a total of…

372 calories and 27 grams of protein!

So I went a little overboard on the bunny grahams, cheese, and chocolate almond milk last night (that’s sort of an understatement…). I always have a problem if I try to eat a healthy meal that I didn’t prepare.. I always seem to binge afterward. This is definitely a thing to work on overcoming. But oh well, today is a new day, and today I’m supposed to run… if my tummy isn’t too upset. Might be posting some recipes later! Love you all, have a great day~

productivity today

  • ran/walked (2.4 miles total)
  • stretched (need to stretch again, maybe do some yoga before bed)
  • got my paycheck
  • grocery shopped
  • had a good snack
  • cleaned my room
  • did stat and some of my calculus (i am at loss of how to do the rest of it)

I just like to look back on how productive of a day it has been. :) I’m glad I actually got to run. I started to, walked about .4 miles, and my headache was overwhelming so I took a nap. I woke up feeling much better, though, and went on that run!
